Lemon Ginger Coconut Balls


Ingredients:

1 1/4 cup raw macadamia nuts

1/2 cups coconut oil

1/2 cup coconut flakes

2 medjool dates (pitted)

1 tbsp chopped ginger

Juice and zest of one small/medium lemon


Directions:

  1. Blend raw macadamia nuts in a food processor until creamy.

  2. Then add the rest of the ingredients and blend until combined.

  3. Form to make balls (it will still be pretty wet)

  4. dip in extra coconut flakes and lemon zest

  5. Freeze for 15 minutes, then transfer and store in the fridge.
